Humm restaurant opens today, October 10, at 435 Hudson Street in the West Village. It is the new restaurant from Daniel Humm and the team behind Eleven Madison Park and Clemente Bar. Everything below comes from Eater NY’s report on October 1. We have not eaten there yet, so this is a guide to what the restaurant has shared, not a review.

Where to find Humm restaurant

The address is 435 Hudson Street, between Leroy and Morton Streets. According to Eater, the space was home to En Japanese Brasserie for two decades. That restaurant closed in December 2024.

The block sits on the western edge of the Village, a few streets from the Hudson. Check your subway route before you go, because weekend service often changes.

How the room works

Eater reports that the Humm restaurant space splits into distinct areas, each with its own menu. The dining room serves the full menu. Meanwhile, the bar and the lounge each offer smaller menus.

That setup matters for planning. If you want the whole experience, book the dining room. On the other hand, the bar and lounge sound like the better choice for a drink and a few plates. We do not know yet how many seats each area holds, or whether the bar takes walk-ins.

What is on the opening menu

According to Eater, the Resy listing says the menu follows the seasons and the harvest of Magic Farms. That is a farm run by Maciek Kobielski in Hoosick Falls, New York. So expect the dishes to change as the year moves on.

For opening, a spokesperson shared several dishes with Eater:

  • Crispy feta with sesame and shallot agrodolce
  • Tuna crudo
  • A chicory and tangerine salad
  • Fried eggplant with pickled green tomatoes
  • Grilled fish
  • Roasted chicken for two
  • Milk and honey for dessert

It reads like a menu built for sharing, with small plates first and a big centerpiece to split. The roasted chicken for two is the dish we are most curious about. Eater describes Humm as the chef who helped turn Eleven Madison Park into a three-Michelin-star restaurant. Coming from him, a roast chicken at the new Humm restaurant reads as a confident choice.

Prices were not part of Eater’s report.

The look of the place

The design comes from Pierre Yovanovitch, according to Eater. The art is a draw in its own right. Eater reports work by Francesco Clemente and Rashid Johnson, along with pieces by Louise Bourgeois and Roni Horn.

That is a serious collection for a neighborhood restaurant. It also fits the team’s history, since Clemente Bar at Eleven Madison Park already carries the painter’s name. Plan a few extra minutes to look around before you sit down.

How to book Humm restaurant

Reservations opened on Thursday, October 1, according to Eater, which cited the restaurant’s Resy listing. If you are hoping for a table, Resy is the place to start. New openings from well-known chefs tend to fill quickly. So set a notification on Resy for the date you want, and check back often for cancellations.

The bar and lounge may be the easier way in. We do not know Humm’s walk-in policy, though, so call ahead before you rely on it.

Who Humm restaurant suits

Based on what the team has shared, this sounds like a place for a long dinner with friends. The shareable plates and the chicken for two point that way. Meanwhile, the bar and lounge menus suggest an easier, drop-in kind of evening.

It may also suit anyone curious about Humm’s cooking who has not booked Eleven Madison Park. With a bar, a lounge and shared plates, the format looks looser than a tasting menu.

If you are a vegetarian, the opening list already includes the feta, the salad and the eggplant. Still, ask about the full menu when you book, because the dishes will shift with the farm’s harvest.

What we do not know yet

We are keeping a short list of open questions. First, there are no prices yet. Second, we have not seen the hours. Third, we do not know how far ahead reservations will run, or how often the menu will change.

Treat this as an opening-day guide based on Eater’s reporting and the restaurant’s own descriptions, and check the Resy listing for the latest.

More big-name openings this fall

Humm is not the only big name opening in Manhattan this fall. Eater reported that Daniel Boulud’s brasserie across from Lincoln Center would open on October 8. We have the details on Brasserie Boulud. For more openings, browse our Food & Drink section.

For now, the Humm restaurant opening is the date to circle. If you get a table, order the chicken for two and save room for milk and honey.
